We were given a lot of strawberries so I had to figure out what to do with them so they wouldn't go bad. This is one of the things I came up with and the family loved them. I hope you enjoy them as much as my kids did. I prefer them with fresh strawberries but you can also make them with strawberry extract.

Steps:
- 1. Preheat oven to 350ºF
- 2. Use nonstick cookie sheet or line with parchment paper.
- 3. Blend together butter and sugar for about 3 minutes.
- 4. Add egg to butter and sugar blending well.
- 5. Add strawberries or strawberry extract blending well.
- 6. Stir in flour, baking powder, salt and vanilla with spoon.
- 7. Scoop cookie dough by the teaspoon or tablespoon full depending what size you want the cookies. Roll into a ball.
- 8. Add granulated sugar and red sugar crystals in a large bowl for rolling cookie dough in before baking.
- 9. Roll each ball evenly, completely coating cookie dough.
- 10. Place on baking sheet 1 1/2"-2" apart and lightly press each cookie down.
- 11. Bake 10-15 minutes or until lightly browned.
- 12. Let cool and eat. ENJOY!
