Cherry Berries in a Cloud image

May take awhile to make, but believe me, it is worth the wait!!

Number Of Ingredients 11

6 egg whites
1/2 tsp cream of tartar
1/4 tsp salt
2 3/4 c sugar
6 oz cream cheese (softened)
1 tsp vanilla
2 c whipping cream (whipped)
2 c minature marshmallows
1 can(s) cherry pie filling
2 c sliced fresh strawberries
tsp lemon juice

Steps:

  • 1. In a mixing bowl, beat egg whites, cream of tartar and salt until foamy. Gradually add 1 3/4 cups sugar, beating on high until stiff peaks form. DO NOT UNDER-Beat. Spread evenly in a greased 13x9x2 pan. Bake at 275 degree for 1 hour. Turn off oven. DO NOT OPEN DOOR. Let cool in the oven over night or at least 12 hours.
  • 2. Beat cream cheese, 1 cup sugar and vanilla until smooth. Gently fold in whipping cream and marshmallows. Spread over meringue and chill 4 hours.
  • 3. Cut into 16 pieces. Combine cherry pie filling, strawberries and lemon juice. Pour 1/4 cup over each serving.
