Cheesy Jalapeno Corn image

This casserole with corn, jalapenos, and cream cheese is similar to another one on this site, but much better. This side can go with any Mexican dish and many more. I even made it as part of our Thanksgiving dinner.

I'm not a big fan of spicy food, so I omitted the jalapenos. It was still delicious!

I tried this recipe with frozen corn, and it worked just as well. I also added a bit of chopped cilantro, which gave it a nice fresh flavor.

I followed the recipe exactly, and it turned out perfectly. The corn was creamy and cheesy, and the jalapenos added just the right amount of spice.
