CHEESY CAULIFLOWER PUFFS image

Yield 6 ramekins

Number Of Ingredients 12

4 oz. softened cream cheese
3 cups cauliflower
8 oz. shredded cheddar
1/2 cup bisquick
1/2 cup cottage cheese
3 lg. eggs, beaten
1/2 cup whole milk
1/4 cup sliced scallions
1/2 tsp salt
sprinkle nutmeg
hot spice, as desired (Tabasco, chili powder, etc.) to taste
cooking spray

Steps:

  • Preheat oven to 400 degrees Microwave cauliflower, let cool, then chop coarsely Mix shredded cheddar, cream cheese, cottage cheese and bisquick. Stir in remaining ingredients Spray 6 ramekins -- spoon mixture in each Bake for 20-30 mins -- until mixture is set.
