Cashew Caramel Yummies image

BARS
1/2 cup sugar
1/2 cup firmly packed brown sugar
2 eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped salted cashew nuts or peanuts
TOPPING
2 tablespoons margarine or butter
1/3 cup chopped salted cashew nuts or peanuts
1/4 cup firmly packed brown sugar
1 1/2 tablespoons half-and-half

Steps:

  • Heat oven to 350°F. Grease 9-inch square pan. In large bowl, combine sugar, 1/2 cup brown sugar and eggs mix well. Stir in flour, baking powder, salt and 1/2 cup cashews. Pour batter into greased pan. Bake at 350°F. for 20 to 25 minutes or until light golden brown.Meanwhile, melt margarine in small saucepan remove from heat. Add remaining topping ingredients mix well. Immediately spread topping over baked bars. Broil about 6 inches from heat for 1 to 2 minutes or until bubbly and golden brown. Cool completely. Cut into bars. I would make this recipe again, but I would make some changes. I would use less sugar in the caramel sauce and roast the cashews for a shorter amount of time.
