Steps:
- 1. In medium mixing bowl, whip together egg white and evaporated skim milk.
- 2. Add yams; stir until smooth.
- 3. Add dates to mixture and mix well.
- 4. Spoon mixture into a 1 1/2 quart caserole.
- 5. For topping, pour maple syrup over top of mixture in casserole.
- 6. Bake in a 350 degree oven for 25 to 30 minute or until hot.
