Cajun Stand-Off Beer Batter image

A very robust, lite, and crispy batter that compliments fish, pork, and chicken as well as broccoli, cauliflower, or zucchini. This beer batter will explode with flavor once it hits your mouth, and thirds will be in order when serving things battered and fried with this goodness.

1 ½ cups all-purpose flour
1 cup cornmeal
¼ cup lemon pepper
3 tablespoons garlic powder
2 tablespoons ground black pepper
1 tablespoon dried oregano
1 tablespoon cayenne pepper
2 teaspoons ground cumin
2 teaspoons ground paprika
2 teaspoons dried thyme
2 teaspoons onion powder
2 cups light beer (such as Coors®)
2 cups light beer (such as Bud Light®)
2 tablespoons lemon juice, or to taste

Steps:

  • Beat flour, cornmeal, lemon pepper, garlic powder, black pepper, oregano, cayenne pepper, cumin, paprika, thyme, onion powder, and both types of light beer together in a large mixing bowl with a whisk until smooth with the consistency of beer batter; add lemon juice.
