Time 35m

Number Of Ingredients 13

1 cup all-purpose flour
1 cup quick-cooking oats
3 tablespoons packed light-brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon coarse salt
4 large eggs, separated, room temperature
2 cups buttermilk, room temperature
1 stick unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
Vegetable-oil cooking spray
Spicy Maple Butter, for serving
Pure maple syrup, for serving

Steps:

  • Preheat oven to 200 degrees. Heat waffle iron. Whisk together flour, oats, brown sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk together yolks, buttermilk, butter, and vanilla; stir into flour mixture.
  • Beat egg whites in a separate bowl until peaks are stiff but not dry. Fold into batter.
  • Coat waffle iron with cooking spray. Pour in batter, spreading almost to edges. Close lid; cook until waffles are golden, 3 to 5 minutes (or as indicated on waffle iron). Transfer to a baking sheet; keep warm in oven while cooking remaining batches. Serve warm, with Spicy Maple Butter and syrup.

These waffles were mediocre at best. They weren't bad, but they weren't anything special either. I probably won't make them again.

These waffles were a complete disaster! They were so bad that I had to throw them away. I'm not sure what went wrong, but I'm never making them again.

I'm not sure what I did wrong, but my waffles turned out really dry. I think I might have overcooked them.

These waffles were a bit too dense for my liking. I think I'll try using a different recipe next time.

I had some trouble getting the waffles to cook evenly. I think I might have needed to use a lower heat setting.

These waffles were a little too sweet for my taste, but they were still good. I think I'll try reducing the amount of sugar next time.

I'm not a big fan of waffles, but these were surprisingly good. The buttermilk made them really moist and fluffy. I'll definitely be making these again.
