1 cup egg substitute
1/4 cup parmesan cheese
1 tablespoon chives, finely chopped
1 cup flour
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 400°F.
  • Coat 12 cup muffin pan with non-stick cooking spray.
  • Mix carrot, egg, cheese, and chives.
  • Add flour and baking powder, stir.
  • Spoon batter equally among muffin cups.
  • Bake 25-30 minutes until golden brown.
