Bryte Havrekaka (Oatmeal Cookies) image

A recipe I found on Outside Oslo, A Scandinavian Food Blog by Daytona Strong. This is a recipe from her grandmother and it didn't include an exact oven temperature or time, but stated to bake in a slow oven, which is a 300-325 degree oven and I would check on them starting at 12 minutes. Here is what she states about the cookies: "With just four ingredients-oatmeal, sugar, butter, and an egg-these cookies are much different from the chewier, denser American oatmeal cookies. These are at once decadent and delicate, with the flavors of the oats and the butter being allowed to shine."

Number Of Ingredients 4

3 cups oatmeal
1 cup butter
1 cup sugar
1 egg

Steps:

  • Melt butter in a saucepan and fry the oatmeal lightly. Stir egg and sugar together. When the oatmeal is cooled, mix it all together. Drop from teaspoon onto well-greased cookie sheet. Bake in a slow oven, 300 - 325 degree oven and check on them at 12 minutes.
