I was treated to this dish by a St. Louis caterer, Patty Long Catering, and found a similar recipe online, which I modified to my liking. I hope you will modify yours. I used a food processor to make this a quick and easy side dish.

This was a great way to use up some leftover Brussels sprouts. The hash was easy to make and very flavorful. I especially liked the addition of the Dijon mustard.

I'm not a big fan of Brussels sprouts, but this hash was surprisingly good. The Brussels sprouts were crispy and tender, and the bacon and potatoes added a nice savory flavor. The eggs on top were the perfect finishing touch.

This was a bit too greasy for me. I think I would use less bacon next time.
