BROCCOLI-POTATO KUGEL image

Number Of Ingredients 11

1 medium onion, diced
3 Tbsp. oil
3 cloves garlic, chopped
2 large potatoes (about 2 pounds), peeled and boiled
6 large eggs
1/3 cup mayonnaise
1/3 cup matzo meal
1 Tbsp. salt
½ tsp. ground pepper
2 pounds broccoli, cut into florets and cooked
4 Tbsp. panko or challah crumbs

Steps:

  • Preheat oven to 350. Sauté onion in 2 to 3 tablespoons oil in a small frying pan over medium heat until browned. Add garlic and stir for a minute or two. Set aside. In large mixing bowl mash potatoes and stir in eggs, one by one, incorporating well. Add mayonnaise, matzo meal, salt and pepper, stirring well. Fold in onion and broccoli. Grease a 9-by-13-inch baking pan and spoon in mixture, spreading evenly. Sprinkle with panko or challah crumbs. Bake for 50 minutes or until golden brown.
