Braised leeks image

Great side dish, mild sweet flavor...and a bit unsual to serve!

Number Of Ingredients 4

4 lb leeks
1 tsp canola oil
1 c vermouth, dry
2 Tbsp sugar

Steps:

  • 1. In a medium skillet with a lid, heat the oil over medium heat.
  • 2. Add the leeks and the chicken broth; then cover and braise, stirring occasionally, for 12 minutes or until leeks are tender.
  • 3. Remove the lid, and cook for about 10 minutes, or until the broth has almost evaporated.
  • 4. Increase heat to high and sprinkle the sugar over the leeks.
  • 5. Cook, stirring frequently, for another 10 minutes or until the leeks are lightly caramelized.

Overall, I thought this was a good recipe. The leeks were tender and flavorful, and the sauce was delicious. I would definitely make it again.
