Betty's apricot chicken image

Not overly sweet and with no jam this meal is a regular in our home. I can have this on the table in 30 minutes. This re-heats really well and is even better the next day. Can be served with rice, buttered noodles or mashed potatoes.

Number Of Ingredients 6

2 lb chicken thighs, chopped into quarters
1 large onion, chopped
1 can(s) apricot nectar
1 can(s) cream of chicken soup
1 sachet french onion soup mix
1/2 c water

Steps:

  • 1. In a large heavy based saucepan, heat a little oil and fry the chicken until browned. Add the onion and cook for 2 - 3 minutes or until translucent.
  • 2. Add the remaining ingredients (use the water to get all the last little bits from the two cans).
  • 3. Turn heat to low and simmer for 20 minutes, stirring at least twice.
