This casserole is a great way to use up leftover taco meat. I just added the taco meat to the casserole along with the other ingredients and it was delicious.

I'm a vegetarian, so I made this casserole with tofu instead of beef. It was still really good! I also added some chopped bell peppers and corn.

I made this casserole in a slow cooker and it turned out great! I just browned the beef and then put all of the ingredients in the slow cooker on low for 8 hours. It was perfect for a busy weeknight dinner.

This casserole was a bit too spicy for my taste, but I still enjoyed it. I would recommend using less chili powder if you don't like spicy food.
