A perfect dish to satisfy any Mexican meal cravings you may have, my family fell in love with this dish the first night we had it! The recipe below is for about 6 servings but I always double it!

Provided by Jamie Owensby

Categories     Tacos & Burritos

Time 55m

Number Of Ingredients 9

3 c cheddar cheese or mexican style cheese, shredded
10 flour tortillas, fajita size
1 can(s) enchilada sauce, mild, medium, or hot
1 can(s) refried beans
1 1/2 lb ground beef
1 medium onion chopped
sour cream (optional)
shredded lettuce (optional)
diced tomatoes (optional)

Steps:

  • 1. Preheat oven to 350.
  • 2. Brown your hamburger with your chopped up medium onion til it crumbles and onion is translucent, drain and put aside.
  • 3. Open can of refried beans, set aside.
  • 4. Pour can of enchilada sauce into bowl and dip both sides of flour tortilla (one by one) into sauce, fill one side of tortilla with hamburger and onion mixture and some refried beans, roll up and place seam side down into a 9x13 pan. Repeat til all flour tortillas are filled. (Note: I always warm up my tortillas in the microwave before starting)
  • 5. Sprinkle your enchiladas with cheese.
  • 6. Bake for about 45 minutes, serve with corn and some refried beans on the side if desired also goes well with Spanish rice!

These enchiladas were amazing! The beef filling was tender and juicy, and the enchilada sauce was the perfect blend of spicy and flavorful. I would definitely make these again.

Overall, I thought these enchiladas were pretty good. The filling was flavorful and moist, and the enchilada sauce was tasty. However, I found the tortillas to be a bit dry and chewy. I think next time I'll try using a different type of tortilla.

I found these enchiladas to be a bit bland. I think they could have used more seasoning in the filling. I also would have liked the enchilada sauce to be a bit thicker.

These enchiladas were a bit too spicy for my taste, but my husband loved them. I think next time I'll use a milder salsa or enchilada sauce.

These enchiladas were easy to make and turned out great! I used ground turkey instead of beef, and they were still delicious. I also added some black beans and corn to the filling for extra flavor and nutrition.
