There are many good burrito recipes, but this one is great. I was pleasantly surprised by how much the addition of vegetables added to the great taste of this dish. Number Of Ingredients 12

1 lb ground beef
1/4 c green onions
1/4 c green bell pepper
1/4 c celery
1 lb refried beans
3/4 c ketchup
3 jalapeno peppers, chopped
8 oz mushrooms, drained
1 pkg flour tortillas
16 oz hot enchilada sauce
2 c cheddar cheese, grated
4 oz jalapeno salsa

Steps:

  • 1. Chop onions, pepper and celery.
  • 2. Brown beef, onions, green pepper and celery.
  • 3. Drain well and mix with beans, peppers, mushrooms and ketchup.
  • 4. Set aside for cooling.
  • 5. Heat tortillas in microwave until just warm. Spoon a small amount of beef mixture onto each tortilla.
  • 6. Roll it up place in dish seam side down. Spoon additional mixture and enchilada sauce on top.
  • 7. Sprinkle with cheese and bake in a preheated 350 0ven for 20 minutes. Remove from the oven and top with jalapeno salsa.
