Number Of Ingredients 6

1 1/2 c sugar
3/4 c brown sugar, firmly packed
1/2 c canned milk (or 1% works)
1 tsp pure vanilla extract
3/4 stick real butter, salted
1 1/2 c pecan halves

Steps:

  • 1. Place all ingredients in a heavy skillet & bring to "soft ball" stage (238-240 degrees), stirring constantly.
  • 2. Remove from heat & stir until mixture thickens, becoming cloudy & creamy and the pecans stay suspended in mixture.
  • 3. Spoon out onto waxed paper or aluminum foil. Yield: approx 2 doz, depending on size.

I had a hard time finding the right consistency for these pralines. They turned out a bit too soft.

I'm not a big fan of pralines, but these were actually really good. They're not too sweet and they have a nice crunchy texture.
