Banana Muffins image

This is a very simple and flavorful banana muffin recipe. It's tender, light and fluffy. Not dense like regular banana bread. It's a great base recipe if you want to incorporate other add-ins like chocolate chips or nuts. Yum!

Number Of Ingredients 6

1/2 c butter (1 stick)
1 c sugar
2 eggs
3 ripe bananas
1 1/4 c all-purpose flour
1/2 tsp baking soda

Steps:

  • 1. Preheat oven to 350 degrees. Coat a 12-cup muffin tin with cooking spray.
  • 2. In a large bowl, beat butter and sugar until creamy.
  • 3. Add eggs and beat until light and fluffy.
  • 4. Stir in bananas; mix well.
  • 5. Add flour and baking soda.
  • 6. Mix just enough to moisten.
  • 7. Spoon batter into muffin cups.
  • 8. Bake 25 to 30 minutes or until a toothpick inserted in center comes out clean.
  • 9. NOTE: For chocolate chip banana muffins, stir in 1 cup semi-sweet chocolate chips to batter before baking.
