Steps:
- For the potatoes: Preheat the oven to 400 degrees F.
- Place the potatoes on a baking sheet. Rub them with the canola oil and bake until they are cooked thoroughly and soft in the center, about 1 hour.
- For the fixins: Put the Cheddar, sour cream, bacon bits, butter cubes and chives in separate bowls to serve on top of the potatoes.
