1/4 c melted butter
salt and pepper to taste
2 Tbsp crushed garlic
8 slice bacon cooked and crumbled
8 oz shredded cheddar cheese
1/2 c chopped green onions
sour cream

Steps:

  • 1. Preheat oven to 400 degrees F Coat both sides of potato slices with butter, Add salt, pepper and garlic; Place them on a parchment lined baking sheet. Bake in the preheated oven for 30 to 40 minutes or until lightly browned on both sides, turning once (I forgot to turn them, they were fine).

These potato rounds are a great way to use up leftover potatoes. I always have a few extra potatoes lying around after making mashed potatoes or roasted potatoes, and these are the perfect way to use them up.
