Baked Broccoli Cheese Patties image

Quick to throw together and awesome in a veggy and cheesey way- a sneaky way to get the kids to eat their veggies and since they are baked and not fried (even tho they taste like it), they are healthy also!

2 tsp canola oil
2 clove garlic, minced
1/2 medium onion, chopped
1 bag(s) (12oz) frozen broccoli, thawed and squeezed to remove water
3/4 c panko bread crumbs
1/2 c sharp cheddar cheese
1/3 c parmesan cheese
2 large eggs, beaten
1/8 tsp salt
1/16 tsp pepper
1/4 tsp old bay seasoning
1/4 tsp garlic powder

Steps:

  • 1. Line a cookie sheet with foil, lightly grease the foil.
  • 2. Preheat oven to 400 degrees.
  • 3. Heat oil in a small pan over medium heat. Add minced garlic, onions and dash salt and pepper. Saute' til onions and garlic are tender; set aside to cool.
  • 4. Put broccoli into large bowl and add onion/garlic mix. Stir gently.
  • 5. Add cheeses and egg and mix.
  • 6. Add panko bread crumbs, garlic powder, Old Bay and salt and pepper. Mix again gently and then form into patties.
  • 7. Place on prepared baking sheet and bake at 400 degrees on one side til brown, 15 mins. Turn over and bake for 15 additional minutes, browning the other side. Enjoy!
