Asparagus Salad With Honey Poppy Seed Vinaigrette image

Nice, light asparagus salad that's easy and quick to throw together. Goes great with seafood, or other rich foods. Note that the dressing probably makes more than you'll need for the salad, so you'll have some left over for other salads.

Number Of Ingredients 8

1 lb asparagus, tough ends snapped off
1/4 cup balsamic vinegar
1/4 cup red wine vinegar
2 tablespoons honey

The asparagus was overcooked and the dressing was too sweet for my taste.

This salad is a bit bland. I would recommend adding some more seasoning to the dressing.

I'm not a huge fan of asparagus, but this salad was actually really good. The dressing is what made it.

I was pleasantly surprised by how much I enjoyed this salad. I'm not usually a big fan of asparagus, but the dressing really made it.

This salad is a great way to use up leftover asparagus. I also like to add a handful of chopped walnuts for extra crunch.

This asparagus salad was a hit at my last dinner party! The honey poppy seed vinaigrette was the perfect balance of sweet and tangy, and the asparagus was cooked to perfection.
