1 tablespoon olive oil
1 jalapeno chile, minced (ribs and seeds removed for less heat if desired)
3 tablespoons minced fresh ginger
3 garlic cloves, minced
Coarse salt and ground pepper
1/4 cup dark-brown sugar
3/4 cup rice vinegar
4 cups shredded rotisserie chicken, skin and bones discarded (from 1 whole chicken), room temperature

1 English cucumber, cut into 3-inch sticks

  • Combine chicken, noodles, cucumber, and cilantro. Drizzle with dressing just before serving.

Overall, I really enjoyed this salad. It's a great way to use up leftover chicken, and it's packed with flavor.

I thought the dressing was a bit bland. I added some extra lime juice and fish sauce, and it was much better.

This salad was a bit too spicy for my taste, but I think I just added too much chili sauce. Next time I'll use less.

I'm not a huge cilantro fan, so I used parsley instead. It still tasted amazing!

I'm not usually a fan of Asian noodle salads, but this one changed my mind. It was so fresh and flavorful, and the chicken was cooked perfectly.
