Arugula, Raspberry and Blackberry Salad image

1/4 cup olive oil
2 tablespoons fresh lemon juice
1 small shallot, minced
Kosher salt and freshly ground black pepper
5 ounces arugula
1 cup raspberries
1 cup blackberries
2 tablespoons crumbled goat cheese

Steps:

  • Whisk together the olive oil, lemon juice, shallot, 1/2 teaspoon salt and a few grinds of pepper in a small bowl.
  • Add the arugula, raspberries, blackberries and goat cheese to a large serving bowl. Drizzle with the vinaigrette and serve immediately.
