This is a wonderful, golden sauce, served over meringues in Portugal. Actually, it is good over almost anything. Another treasure from Jean Anderson's "Food of Portugal" Most of the time is totally passive--soaking time for the fruit.

This sauce was a bit too runny for my taste, but I was able to thicken it up by adding a little bit of cornstarch. Overall, it was a good sauce and I would make it again with a few adjustments.

I'm not a huge fan of apricots, but I decided to try this sauce anyway. I was pleasantly surprised! The apricot flavor was subtle and not overpowering, and the sauce had a nice tangy sweetness. I would definitely make this sauce again.
