Apricot Cobbler Recipe - (4.5/5) image

Number Of Ingredients 16

1/2 tsp almond extract
1/2 tsp cinnamon
1/4 tsp giner
1/4 tsp nutmeg
1/2 tsp cardamon
2 TBSPs Amaretto Liquer
1 1/2 lbs fresh apricots, thinly sliced(about 4 cups)
3/4 cup sugar
2 TBSPs minute Tapioca
2/3 cup water
3/4 cup flour
2 TBSPs sugar
1 tsp Calumet Baking Powder
1/8 tsp salt
1/4 cup (1/2 stick) cold butter or margarine, cut up
1/3 cup milk

Steps:

  • 1) Preheat oven to 375 degrees 2) Mix apricots, 3/4 cup sugar, tapioca, almond extract, cinnamon, ginger, nutmeg, cardamon, and amaretto in medium saucepan. 3) Stir in water. Bring to boil on medium heat, stirring occasionally. Pour into 9-inch square baking dish; set aside. 4) Mix flour, 2 TBSPs sugar, baking powder and salt in medium bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in milk until mixture forms soft dough. Drop by heaping tablespoons onto hot fruit mixture. 5) Bake 30 minures or until biscuit topping is golden brown. 6) Top with Cool Whip or Vanilla Ice Cream
