Apple Salad With Creamy Maple Dressing image

I got this out of a coupon paper, it looks awesome. I'd like to use granny smith apples with this, and it calls for 2 apples so I picked one of each recommended. I'm also subbing the cranberries for chopped dates because it looks sweet enough!

1/2 cup canola oil
1/4 cup maple syrup (4 TB)
1/4 cup mayonnaise (4 TB)
3 tablespoons white wine vinegar
2 teaspoons sugar (I'd probably halve this if using really sweet syrup)
salt and pepper, to taste
5 ounces mixed baby greens
1 gala apples, cored and chopped
1 Red Delicious apple, cored and chopped
1/2 cup dried cranberries
1/2 cup chopped walnuts

Steps:

  • Whisk together the syrup, mayo, vinegar, and sugar in a medium bowl.
  • Whisk in the oil gradually until the mixture thickens slighlty, season with salt and pepper to your liking.
  • Toss the greens, apples, cranberries, and half the walnuts together in a large bowl, toss with enough dressing to coat.
  • Sprinkle with remaining walnuts, and serve.
