This takes me back to my grandmother's delicious apple pudding with vanilla sauce...tastes just like I remember hers! This is a friend's mother's recipe and is a gem! The vanilla sauce is the KEY to all the yummy-ish-ous (is that a word? You get my point!)

Steps:
- 1. Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
- 2. In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
- 3. Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
- 4. Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
- 5. Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!
