Apple Pudding with Vanilla Sauce image

This takes me back to my grandmother's delicious apple pudding with vanilla sauce...tastes just like I remember hers! This is a friend's mother's recipe and is a gem! The vanilla sauce is the KEY to all the yummy-ish-ous (is that a word? You get my point!)

Time 1h

Number Of Ingredients 17

1 1/4 c sifted flour
1 tsp baking powder
1/2 tsp baking soda
1/3 c butter, room temp or crisco
1/2 tsp grated lemon rind
1 tsp vanilla
1 c sugar
1 egg, room temperature
1 1/2 c diced uncooked apples
VANILLA SAUCE
1/3 c sugar
1 Tbsp cornstarch
1/8 tsp salt
1 c water
2 Tbsp butter, soft
1/4 tsp grated lemon rind
1/2 tsp vanilla

Steps:

  • 1. Pudding: (I left out the 1/4 tsp. salt and could not add it above, sorry.) Sift together the flour, salt, baking soda and baking powder. Set aside.
  • 2. In a large bowl, cream butter with lemon rind, vanilla and sugar. Beat in egg. Stir in flour mixture. Add apples and mix ONLY until blended.
  • 3. Turn into a greased and floured 8x8x2-inch pan. Bake in preheated 350 degree oven for 45 minutes or until done.
  • 4. Vanilla Sauce: In a medium saucepan over medium heat, combine sugar with cornstarch and salt. Gradually stir in water and mix well. Cook until medium thickness.
  • 5. Remove from heat and stir in butter, lemon rind and vanilla. Serve warm over apple pudding and thoroughly enjoy!

Not a fan of raisins, so I omitted them. Otherwise, followed the recipe exactly. Turned out great!

So easy to make and so delicious! I used Granny Smith apples for a bit of tartness. The vanilla sauce was perfect, not too sweet.

This apple pudding was a delightful treat! The vanilla sauce was the perfect complement to the moist and flavorful pudding. I especially appreciated the use of fresh apples, which gave the dish a wonderfully rustic and homemade feel.
