ANGEL HAIR PASTA WITH SUN-DRIED TOMATO SAUCE image

Number Of Ingredients 11

4 T olive oil
4 chicken breast halves, cubed
4 cloves garlic, chopped
2/3 c. oil-packed sun-dried tomatoes
1 c. sliced white mushrooms
1/2 cup dry white wine
1 c. chicken stock
2 c. whipped cream (can be substituted down to 1/2 cup)
2 T chopped basil
12 oz dried angel hair pasta
4 oz grated Parmasan cheese

Steps:

  • Saute chicken in olive oil until golden brown. Add garlic, tomatoes and mushrooms. Saute 1 min. over high heat. Pour in wine; add stock and reduce by half. Add cream and reduce again by 1/2.
