Yield 4 burgers

Number Of Ingredients 13

Moon Time's Anasazi Bean Burger
From Moon Time pub
1 cup dried Anasazi beans
1 tablespoon olive oil, plus more as needed
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/4 cup carrots, diced
1 teaspoon cumin
1/2 teaspoon cayenne pepper
Salt and pepper to taste
1 egg
Approximately 1 cup dried bread crumbs

Steps:

  • Step 1 Distinctive-looking Anasazi beans have a unique, slightly nutty flavor and firm texture. To make their popular bean burger, chefs at Moon Time pub first cook the beans in water with a pinch of salt for about an hour until soft but not mushy. Step 2 Coarsely chop the drained and cooled beans in a food processor, using only a couple of pulses. Or, break up the beans using your hands. Add the sauteed veggies to the chopped beans and then add the egg, seasonings and bread crumbs. Step 3 After forming the patties, saute them in canola oil until they're golden, about 3 minutes on each side over medium high heat. Moon Time's Brad Fosseen adds a slice of cheddar and finishes the bean burger in a 400 degree oven for 2 or 3 minutes.

These burgers were just okay. They weren't as flavorful as I thought they would be, and they were a bit bland. I think I would add more spices next time.

These burgers were delicious, but they were a bit time-consuming to make. I think I would look for a simpler recipe next time.

The flavor of these burgers was great, but they fell apart easily. I think I would try cooking them in a pan instead of on the grill next time.

These burgers were a bit too dry for my taste, even though I followed the recipe exactly. I think I would add some more liquid, like vegetable broth or tomato sauce, to the bean mixture next time.

I'm not a huge fan of beans, but these burgers were surprisingly good! The flavors all worked well together, and the burgers were nice and moist. I served them on whole wheat buns with lettuce, tomato, and avocado, and they were delicious!

These burgers were super easy to make, and they tasted great! I used a food processor to chop the beans, which made the process even quicker. I also added a bit of garlic powder and onion powder to the bean mixture for extra flavor. Will definitely b

These were a hit at my last potluck! Everyone loved them, even the meat-eaters. I made a few changes, though - I used a can of chipotle peppers in adobo sauce instead of the chili powder, and I added some chopped cilantro to the bean mixture. They we

Easy and delicious! I subbed out the bread crumbs for quinoa flakes, and they still held together well. I also added some crumbled feta cheese to the bean mixture, which gave them a nice tangy flavor. Will definitely be making these again!

My family raved about these burgers! I used a mix of black and pinto beans, and added some diced bell pepper and jalapeno for a little extra flavor. They held together perfectly on the grill, and had a nice smoky flavor. Will definitely be making the
