Amy's Low Fat Blueberry Bran Muffins image

I found this recipe online a long time ago and have tweeked it over time to perfection. Low calorie, low fat, tasty muffins. These freeze very well also! We eat them for breakfast everyday. I double the recipe and freeze and then put them in the microwave for about 30 seconds. I also use 50/50 flour instead of 2 different ones.

1 egg
1 teaspoon vanilla

In another small bowl, add Flour, Baking Soda and Powder, Salt and Cinnamon to taste. I usually add about a teaspoon or more. Add Wheat Bran mix to Applesauce mix and stir well.
