ALL-AMERICAN HAM AND MACARONI SALAD image

1 cup wagon wheel pasta
1.5 cups (8 oz) cooke ham, cubed
4 oz monterey jack / cheddar cheese, cubed
1 cup frozen peas
1 stalk celery, thinly sliced
0.25 cup onion, finely chopped
2 tbsp diced pimiento
0.5 cup mayo
0.25 cup sweet pickle relish
1-2 tbsp milk (optional)
Dash pepper
8 cherry tomatoes
Fresh parsley sprig (optional)

Steps:

  • * Cook pasta; drain; rinse with cold water; drain again * In large bowl, combine pasta, ham, cheese, celery, onion, and pimento * In small bowl, stir mayo, relish, pickle, milk, and pepper. * combine * cover and chill 4-24 hours * before serving, stir, transfer to serving dish, arrange tomatoes and parsley
