2 large eggs
4 slices seeded light rye bread
2 slices swiss cheese
6 ounces corned beef, thin sliced
2 tablespoons sauerkraut
3 sprays butter-flavored cooking spray
2 tablespoons thousand island dressing (optional)

Steps:

  • Fry eggs in a non-stick skillet lightly sprayed with cooking spray with yolks broken until done.
  • Spray one side of each piece of bread.
  • Assemble the sandwiches in this sequence - bottom bread slice, cheese, meat, sauerkraut, egg, dressing if using, top bread slice.
  • Place sandwiches in air fryer basket and cook at 350 degrees for 10 minutes, flip halfway through cooking time, or until cheese melts and bread is browned.
