BARLEY SALAD WITH ASPARAGUS AND MUSHROOMS

Barley Salad with Asparagus and Mushrooms image

This is an awesome salad to take on a picnic or to a barbecue. Sometimes with grain salads, I feel like grain is too much of the focus-but here, we have equal amounts of asparagus and mushrooms, and all of the ingredients play together beautifully.

Provided by Naomi Pomeroy

Categories     main-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 14

1 cup barley
8 cups beef stock
2 1/2 teaspoons salt, divided
3 shallots
3 cloves garlic, sliced
1/2 large onion
6 tablespoons olive oil, divided
8 grinds of pepper
1/2 teaspoon chili flakes
3 cups oyster mushrooms, sliced
1 pound asparagus
1/2 teaspoon fresh thyme leaves
2 ounces Parmesan
1 teaspoon sherry vinegar

Steps:

  • For the barley: In a medium stockpot, combine barley, stock, and 1½ teaspoons salt. Bring to a boil, reduce to a simmer, and cook uncovered until barley is cooked through, about 45 minutes.
  • For the onion mixture: Chop the shallots by cutting off the bottoms to make them flat. Then cut into the shallot lengthwise, leaving the root end intact; cut down and across for a clean dice. Peel the garlic by smashing it with the back of the knife. Remove the peel, cut the hard root off, and thinly slice. Slice the onion at an angle into half-moon shapes. Add 2 tablespoons of olive oil to a skillet over medium heat, followed by the shallots and onion. Add ½ teaspoon salt and the pepper; sweat until translucent, 1-2 minutes. Add the garlic and chili flakes and cook until onions are thoroughly softened. Remove from the skillet and set aside.
  • For the mushrooms and asparagus: Add 2 tablespoons of olive oil to a skillet over medium-high heat, followed by the mushrooms. Add a ½ teaspoon of salt and cook until they have released their liquid and begun to caramelize around the edges. Add the onion mixture back into the pan and set aside. Meanwhile, trim the asparagus by snapping the tough woody ends where they naturally break. Cut diagonally, on a bias.
  • Once the grains have opened up and are plump, drain the barley. Spread in a single layer on a sheet tray to cool down. Reheat the mushroom/onion mixture and add the thyme, asparagus, and 2 tablespoons of olive oil. Toss and cook for 1 minute; then remove to the sheet tray with the barley. Use a vegetable peeler to shave the Parmesan; set aside.
  • Assemble the dish: Place the cooled barley and asparagus mixture into a large mixing bowl. Toss, taste to adjust seasoning, and drizzle the vinegar and 1 teaspoon of olive oil around the edge of the bowl, followed by the Parmesan shavings. Gently toss again, taste for seasoning, and serve.

RAW ASPARAGUS SALAD WITH WALNUTS & PARMESAN

Raw Asparagus Salad with Walnuts & Parmesan image

From Joshua McFadden's Six Seasons, a favorite cookbook. Notes: Bread Crumbs: I love whizzing up stale bread in the food processor and toasting the crumbs in olive oil. If you're not up for this, panko bread crumbs would be fine. I would still toast them in olive oil before adding them to the salad. You also could omit the bread crumbs and add more walnuts in their place. Also: You only need 1/3 cup of toasted bread crumbs for this recipe, but I find it easier to make a large batch of crumbs than a small one. Save the remaining crumbs for other salads, soups, or eggs. They're irresistible!

Provided by Alexandra Stafford

Categories     Salad

Time 20m

Number Of Ingredients 13

a large hunk of bread, to yield 1.5 to 2 cups lightly packed fresh crumbs, see notes
2 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt
1/2 cup walnuts
1 lb. asparagus, tough bottoms trimmed
1/2 cup grated Parmigiano Reggiano
1/4-1/2 teaspoon crushed red pepper flakes
salt to taste, I use Maldon here
freshly cracked black pepper to taste
zest from 1 lemon
Juice from 1 to 2 lemons to yield 1/4 cup
1/4 cup lightly packed mint leaves, optional
1/4 cup olive oil

Steps:

  • Place day-old bread in the food processor and whiz until fine. Measure out 1.5 to 2 cups of crumbs. Heat the 2 tablespoons of oil over medium heat. Add the crumbs and the salt. Cook, stirring occasionally, until crumbs are golden brown. This could take 5 to 15 minutes (or longer) depending on your heat level. If you have the time, go slowly to prevent burning. When the crumbs are nice and golden, turn off the heat. Let cool briefly. Taste. Add more salt if necessary. Measure out 1/3 cup of the crumbs - this is the amount the original recipe calls for. You can use more if you wish.
  • Place the walnuts in a medium skillet. Set the skillet over low heat. Allow the walnuts to toast slowly while you prepare the salad. Remove them from the heat when they smell and look toasty. You can chop them on a cutting board or by gently crushing them in a tea towel.
  • Using a sharp knife, slice the asparagus thinly on the bias.
  • In a large bowl, combine the toasted walnuts, the 1/3 cup (or more!) toasted bread crumbs, the grated Parmigiano Reggiano, the crushed red pepper flakes (starting with 1/4 teaspoon if you are sensitive to heat), salt and pepper to taste, and the zest of the lemon. Stir to combine. Add the asparagus and toss to combine. "Taste and dial in the flavors by adding more salt, black pepper, chile flakes, or lemon juice. When the flavors are bright and delicious, add the mint (if using) and 1/4 cup olive oil." Toss to combine. Taste and adjust the flavors again if necessary.
  • Transfer to a serving platter. Crack more pepper over top if you wish.

Tips:

  • Choose fresh, tender asparagus. Look for spears that are bright green and have tightly closed tips. Avoid spears that are wilted or have brown or yellow spots.
  • Trim the asparagus spears. Snap off the tough, woody ends of the spears. You can also use a sharp knife to cut off the ends.
  • Blanch the asparagus spears. This will help to preserve their鮮脆度。 To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus spears and cook for 2-3 minutes, or until they are tender but still slightly firm. Immediately transfer the asparagus spears to a bowl of ice water to stop the cooking process.
  • Prepare the mushrooms. If using fresh mushrooms, clean them with a damp cloth or paper towel. If using dried mushrooms, soak them in hot water for 30 minutes before using.
  • Toast the nuts. This will help to bring out their flavor. To toast the nuts, spread them in a single layer on a baking sheet and bake at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown.
  • Assemble the salad. In a large bowl, combine the asparagus spears, mushrooms, parsley, nuts, and Parmesan cheese. Drizzle with olive oil and lemon juice and toss to coat.

Conclusion:

This raw asparagus, mushroom, and parsley salad with nuts and Parmesan is a delicious and healthy salad that is perfect for a light lunch or dinner. The asparagus is 鮮脆 and slightly sweet, the mushrooms are earthy and flavorful, and the parsley adds a fresh, herbaceous flavor. The nuts and Parmesan cheese add a bit of crunch and richness. This salad is also very easy to make, and it can be made ahead of time, which makes it a great option for busy weeknights.
