RASPBERRY WHIPPED CREAM

Raspberry Whipped Cream image

Use this light pink, not-too-sweet raspberry whipped cream to frost The Best Chocolate Cake, or simply use it as raspberry whipped cream. It's great on waffles or pancakes, over mixed berries - you name it.

Categories     Sweet Spreads

Time 40m

Number Of Ingredients 3

10 ounces (284 grams) raspberries, fresh or frozen
2/3 cup (133 grams) granulated sugar, divided
2 cups (480 ml) heavy cream

Steps:

  • In a small pot, combine the raspberries and 1/3 cup sugar. Cook over medium-high heat, stirring occasionally, until the raspberries have broken down most of the way and the syrup has thickened slightly, about 10 minutes.
  • Push the syrup through a fine-mesh strainer to remove seeds. You'll inevitably lose a fair amount of the beautiful red pulp to a fine-mesh strainer, but keep pushing and stirring as long as you can stand it to extract as much as possible. You can do this step up to a few days in advance and keep the strained syrup in the fridge. Either way, be sure to let the syrup cool completely before proceeding. (You can set the bowl with the syrup over a bowl of ice to speed the process if you like.)
  • As close to serving time as feasible, beat the heavy cream just shy of the soft peak stage with an electric mixer. Add the remaining 1/3 cup sugar and beat to incorporate. Pour in the raspberry syrup and beat just a touch more. You can finish the mixing by hand to make sure it's well-mixed without overbeating.

RASPBERRY CREAM CHEESE PIE

Raspberry Cream Cheese Pie image

I originally started with my Blueberry Cream Cheese Pie, then decided to try it with raspberries when they came into season. YUM! I might even like this one better? You could probably get away with using a premade graham cracker crust recipe for this one, though I'm a sucker for good pie crust. Try my All Butter Pie Crust (Pastry) recipe!

Provided by Battle in Seattle

Categories     Pie

Time 50m

Yield 1 pie, 8-10 serving(s)

Number Of Ingredients 10

9 inches pie shells, baked & cooled
6 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
3/4 cup heavy whipping cream, whipped until stiff peaks are formed
2/3 cup granulated sugar
1/4 cup cornstarch
1/2 cup water
1/4 cup lemon juice (typically from one lemon)
4 cups fresh raspberries

Steps:

  • In a small mixing bowl, beat soft cream cheese, confectioner's sugar and vanilla until smooth. Mix in half of whipped cream until thoroughly combined, then fold in remaining cream very gently. Spread evenly into pie shell. (You may refrigerate while cooking berries.).
  • In a large saucepan, combine the sugar, cornstarch, water and lemon juice with a whisk until smooth. Stir in raspberries.
  • Bring to a simmer over medium heat; cook and stir berries for 2 minutes or until thickened. Then, in a mesh strainer set over a medium bowl, press berries into strainer, separating seeds from filling. (If you'd like, as I did--keep about a tablespoon of seeds in the filling for texture/appearance.) Cool to room temperature, then spread over cream cheese layer.
  • Refrigerate until serving. Filling will thicken as it sets--don't try to cut into it without letting it completely cool!

Tips:

  • To make the whipped cream extra fluffy, chill the bowl and beaters before whipping.
  • If you don't have a stand mixer, you can whip the cream by hand with a whisk.
  • Start whipping the cream on low speed and gradually increase the speed as the cream begins to thicken.
  • Be careful not to over-whip the cream, as it will become grainy.
  • If you're using a flavored extract, such as vanilla or almond, add it to the cream towards the end of the whipping process.

Conclusion:

Raspberry whipped cream is a delicious and versatile topping that can be used on a variety of desserts. It's perfect for pies, cakes, cupcakes, and even ice cream. You can also use raspberry whipped cream as a dip for fresh fruit or berries. The whipped cream is light and fluffy, with a sweet and tangy flavor. You can adjust the flavor of the whipped cream by using different types of berries or extracts. For example, you could use strawberry or blueberry extract instead of raspberry extract. Raspberry whipped cream is a great way to add a special touch to any dessert.
