¼ cup (60 ml) water
¼ cup (60 ml) apple cider vinegar or raspberry vinegar
1 teaspoon salt
2 tablespoons (30 ml) honey
1 teaspoon dried basil
½ cup (60 g) raspberries, fresh or frozen, thawed
¾ cup (180 ml) olive oil

Steps:

  • 1. Place water, vinegar, salt, honey, basil, and raspberries into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 5. Remove lid plug and drizzle olive oil in a slow stream through the lid plug opening.
  • 4. Replace lid plug and turn to Variable 10, then High. Blend for an additional 10 seconds.

1 teaspoon balsamic vinegar
1/2 teaspoon chopped fresh thyme (or 1/2 tsp dried)
1/2 teaspoon Dijon mustard
1/4 teaspoon fresh ground black pepper
6 -8 raspberries, fresh or thawed frozen
6 tablespoons extra virgin olive oil

Steps:

  • In small bowl, whisk together the white-wine vinegar, balsamic vinegar, thyme, mustard, salt, and pepper.
  • Add the raspberries and crush them to a rough purée with a spoon or your whisk.
  • Slowly whisk in the oil until the dressing is creamy and blended.

8 cups chopped greens and any vegetables you have on hand

An easy way to make use of the summer's best produce, my homemade raspberry vinaigrette dressing is oh so easy to make. With just three base ingredients, this raspberry vinaigrette recipe is gluten-free, vegan and has no added sugar - just plenty of goodness.

2 cups raspberries
1/4 cup wine vinegar (red or white)
2 Tbsp olive oil (extra virgin)
1/2 tsp salt
1/4 tsp black pepper
sweetener (optional - honey, agave, maple, erythritol, or sugar)

Steps:

  • Rinse the raspberries and place them in a small saucepan. Roughly mash the raspberries with a potato masher or fork.If you think that the raspberries are not sweet enough, you can then add 1-2 tsp of sweetener.
  • Heat them on low heat for about 5 minutes. This will help to intensify the flavors. Stir the mixture occasionally.
  • Once reduced, sieve the mixture with a fine mesh strainer. This helps to get rid of the raspberry seeds and excess thick fruity pulp. If you don't mind your dressing with a bit of "body", feel free to skip this step.
  • Allow the raspberry mixture to cool before mixing with the remainder of the vinaigrette ingredients - olive oil, vinegar, salt, and pepper. Whisk well. Taste the dressing and adjust the sweetness/acid, as needed. I like to allow the dressing an hour or two to infuse. However, it is ready to use immediately.

3/4 cup red wine vinegar
3/4 cup raspberries, fresh or frozen
1 teaspoon chopped shallot
2 tablespoons honey
1 teaspoon sugar
1 teaspoon fresh lemon juice
1 1/2 teaspoons Dijon mustard
1/4 teaspoon dried thyme
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
1 teaspoon water
3/4 cup canola oil

Steps:

  • depending on the sweetness of the raspberries (frozen tend to be sweeter than fresh) you may need to adjust the amount of sugar to taste.
  • In a one quart saucepan, combine vinegar, raspberries and shallot.
  • Crush raspberries with a fork.
  • Bring mixture to a boil and then reduce heat to a simmer.
  • Cook for 5 mins or until mixture is reduced to approx 1/2 a cup.
  • Strain mixture through a sieve into a blender.
  • Process until smooth.
  • Allow to cool.
  • Add honey, sugar, lemon juice, mustard, dried thyme, salt, black pepper and water.
  • Blend until smooth.
  • Scrape down sides with a spatula and blend briefly to ensure that everything is well mixed.
  • While blender is running, slowly drizzle half the canola oil in a steady stream.
  • Stop the blender and scrape down the sides again.
  • Turn the blender back on and slowly drizzle the remaining oil inches.
  • Process until emulsified.
