Two 6-ounce containers raspberry yogurt
One 3.4-ounce package instant vanilla pudding mix
1 cup heavy cream

Pour in the heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula. Turn the mixer on medium-high speed and beat until thick, about 2 minutes.
  • Turn off the mixer, then fold in the raspberries until just combined. Pour into the cooled crust and spread evenly. Freeze until very firm, about 2 hours. Cut into slices and top each slice with cookie crumbs, dollops of whipped cream and extra raspberries.

Tips:

  • For a smoother pie, use frozen raspberries that have been thawed and drained.
  • If you don't have fresh lemon juice, you can use bottled lemon juice. Just be sure to use 100% lemon juice and not a lemon-flavored drink.
  • If you don't have a graham cracker crust, you can make your own by crushing graham crackers and mixing them with melted butter. Press the mixture into a 9-inch pie plate and bake at 350 degrees Fahrenheit for 10 minutes.
  • Be sure to chill the pie for at least 4 hours before serving. This will help it set and make it easier to slice.
  • For a more tart pie, use more lemon juice. For a sweeter pie, use less lemon juice and add more sugar.
