¼ cup butter, softened
1 cup confectioners' sugar

1 1/2 sticks unsalted butter, room temperature, plus more for pan
2 cups unbleached all-purpose flour, plus more for pan
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
2/3 cup whole milk
1 tablespoon finely grated lemon zest, plus 1/3 cup fresh juice
1 cup granulated sugar
2 teaspoons pure vanilla paste or extract
2 large eggs, room temperature
6 ounces cream cheese, room temperature
6 tablespoons unsalted butter, room temperature
1 cup plus 2 tablespoons confectioners' sugar, sifted
1/4 ounce freeze-dried raspberries (1/3 cup), finely ground
Fresh raspberries, for serving

Steps:

  • For the Cake: Preheat oven to 350°F. Brush a 9-inch round cake pan with butter. Line bottom with parchment; brush with butter. Dust with flour, tapping out excess.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt. In another, stir together milk and lemon juice. In the bowl of a mixer fitted with the paddle attachment, beat butter with lemon zest, granulated sugar, and vanilla on medium speed until light and fluffy, 3 to 4 minutes. Beat in eggs, one at a time.
  • Reduce speed to low; beat in flour mixture in three additions, alternating with milk mixture, just until no dry flour remains (do not overmix). Transfer batter to prepared pan; smooth top. Bake until cake is golden and springs back when gently pressed, about 40 minutes. Transfer pan to a wire rack; let cool 20 minutes. Turn cake out onto rack, remove parchment, and let cool completely.
  • For the Frosting: In a bowl, beat cream cheese and butter until light and fluffy, 2 to 3 minutes. Beat in confectioners' sugar and freeze-dried berries until smooth.
  • Spread frosting over top of cake. Decorate with fresh berries. Cake is best served on the same day, but can be refrigerated in an airtight container up to 2 days.

  • In a small bowl, beat cream until stiff peaks form; set aside. In a large bowl, beat the eggs, sugar and vanilla until thick and lemon-colored. Combine flour, walnuts, baking powder and salt; fold into egg mixture alternately with whipped cream., Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small bowl, beat cream until stiff peaks form; set aside. In a large bowl, beat the cream cheese, sugar and salt until fluffy. Beat in vanilla. Fold in whipped cream., Cut each cake horizontally into two layers. Place bottom layer on serving plate; spread with about 1/2 cup frosting. Top with second cake layer; spread with half of the raspberry preserves. Repeat layers. Frost sides of cake with frosting., Cut a small hole in the corner of a pastry or plastic bag; insert ribbon tip #47. Fill bag with remaining frosting; pipe a lattice design on top of cake. 1/4 cup red currant jelly, if desired
Fresh mint leaves, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Spray bottoms and sides of two 8- or 9-inch round cake pans with baking spray with flour.

8 oz cream cheese, softened
1/4 c butter, softened
2 1/2 to 3 c powdered sugar
1 tsp vanilla extract
1 pt raspberries

Steps:

  • 1. Cream the butter and cream cheese together until smooth and fluffy (just like creaming butter and sugar for any other batter).
  • 2. Stir in vanilla. Start adding in sugar at least 2 cups and more depending on the thickness and sweetness desired.
  • 3. Then comes the fun part add in the raspberries and turn on the mixer. The beater will macerate the berries, turning the frosting a lovely pink and adding the sweet flavor throughout. So yummy.
  • 4. Perfect with chocolate or straight out of the bowl.

  • Use fresh raspberries for the best flavor. Frozen raspberries can also be used, but they should be thawed and drained before using.
