RASPBERRY CHIPOTLE BBQ SAUCE
This is a super sweet and spicy BBQ sauce with fruit that my family and I found in Mexico last Christmas. Try it over grilled tuna like we did, or experiment with chicken or ribs. I have also served this poured over a block of cream cheese to smear over crackers. Nice!

Steps:
- in a medium saucepan over medium heat, add all of the ingredients for the bbq sauce and heat to a soft boil, about 5-7 minutes. turn the heat down to simmer, and stir occasionally allowing the berries to break down and the sauce flavors to meld together.
Tips:
- Use fresh fruit for the best flavor. Frozen or canned fruit can be used, but fresh fruit will give your sauce a brighter, more vibrant flavor.
- Don't be afraid to experiment with different types of fruit. While raspberries are the traditional fruit for barbecue sauce, you can also use blueberries, blackberries, peaches, or even mangoes.
- Add a little spice to your sauce. A teaspoon of chili powder or cayenne pepper can give your sauce a nice kick. You can also add a tablespoon of brown sugar or honey to balance out the heat.
- Let your sauce simmer for at least 30 minutes. This will allow the flavors to meld and develop. The longer you simmer your sauce, the better it will taste.
- Serve your sauce with your favorite grilled or smoked meats. Raspberry barbecue sauce is especially good with chicken, pork, and salmon.
