CORONATION CHICKEN image

Number Of Ingredients 16

1 tsp oil
1 small onion chopped
1 tsp curry
1/2 tsp tomato paste
1/4 cup water
1 bay leaf
1/2 cup red wine
1 slice lemon
1 tsp lemon juice
3 pounds boneless chicken breasts cooked
1 cup mayonnaise
2 Tbsp cream
2 Tbsp apricot jam
Puff pastry
1 Egg
1 Tsp water

Steps:

  • Cook onion in oil until clear and starting to brown. Add curry and tomato paste for one minute. Add water, bay leaf, wine, lemon, juice and jam. Simmer for 15 minutes. Strain. Chop chicken. Mix with mayonnaise and cream. Add sauce. Mix well and cool. Defrost puff pastry or make your own. Roll out two sheets of pre made pastry according to package directions. Place chicken mixture in middle. Roll over to form log. Pinch ends. Mix egg and water Brush pastry log with egg wash. Slash top in 4 places. Bake in preheated 400F oven 15-20 min until golden brown.
