I'll usually buy several bags of fresh cranberries when they're available and freeze them to use throughout the year. I've also discovered that powdered buttermilk works well. -Jane Yunker, Rochester, New York

Tips

- Use cold butter and buttermilk: This will help create a more tender muffin and prevent the muffins from spreading too much while baking. - Don't overmix the batter: Overmixing will result in tough muffins. Mix just until the ingredients are combined and no more. - Fill the muffin cups evenly: This will help ensure that all the muffins bake evenly. - Bake the muffins until a toothpick inserted into the center comes out clean: Overbaking will result in dry muffins. - Let the muffins cool in the pan for a few minutes before transferring to a wire rack: This will help prevent the muffins from crumbling. - Store the muffins in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.

Conclusion

These cranberry buttermilk oat muffins are a delicious and easy-to-make breakfast or snack. Featuring tender muffin crumb, tangy cranberries and a hint of cinnamon, it's a delightful combination that will ensure they vanish quickly. Remember these tips and you will be enjoying these freshly-baked gems in no time. Happy baking!
