SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES
Steps:
- In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

Steps:
- Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well. Cut up onion and garlic and set aside. Cook bacon; drain on paper towels then cut or tear into small pieces. Set aside. In a large, deep skillet melt the butter over medium heat. Add onion and sauté just until softened. Add garlic and cook for another minute. Increase heat to medium-high; add the beans and potatoes and let cook undisturbed for 3-4 minutes then use an egg turner or similar spatula to flip the mixture over so you don't wreck the beans and potatoes. Cook down until almost all the liquid is gone, flipping occasionally to prevent scorching. When liquid is almost out, sprinkle the dry Ranch mix and black pepper over the top and flip over a couple of times to combine. Just before beans are finished cooking, add the bacon (or you can wait until serving and use it to garnish the top). (I put half of it in the beans and garnished top with other half). Taste and add salt only if needed since the bacon and Ranch mix are salty.

Tips:
- Use fresh green beans: Fresh green beans have a crisp texture and a slightly sweet flavor that is perfect for this dish. If you can't find fresh green beans, you can use frozen or canned green beans, but the texture will be different.
- Cook the bacon until it is crispy: Crispy bacon adds a delicious smoky flavor to this dish. If you don't like bacon, you can substitute another type of meat, such as ham or sausage.
- Use a good quality ranch dressing: The ranch dressing is the key ingredient in this dish, so it's important to use a good quality dressing. You can make your own ranch dressing or use a store-bought dressing.
- Don't overcook the green beans: Green beans should be cooked until they are tender-crisp. If you overcook them, they will become mushy.
- Serve the dish warm: This dish is best served warm. You can reheat it in the microwave or in a skillet over low heat.
Conclusion:
Ranch green beans and potatoes with bacon is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great dish to bring to a potluck or party. The combination of green beans, potatoes, bacon, and ranch dressing is sure to please everyone.
