1 head green cabbage (about 2 lb)
2 cups mayonnaise or salad dressing
2 tablespoons prepared horseradish
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar (omit if using salad dressing)
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon freshly ground pepper
1 clove garlic, finely chopped
3 medium carrots, shredded (1 1/4 cups)

Steps:

  • Use sharp knife to cut cabbage head into quarters and remove core. Place 1 quarter, flat side down, on cutting board. Slice cabbage thinly with knife. Cut slices several times to make smaller pieces. Repeat with remaining quarters. You will need about 10 cups shredded cabbage.
  • In large bowl, mix mayonnaise, horseradish, vinegar, mustard, sugar, salt, celery seed, pepper and garlic. Add carrots and cabbage. Stir well to combine. Serve immediately or refrigerate up to 3 hours.

1 cup sliced red onion
1 cup seeded and sliced cucumber
½ cup extra virgin olive oil
2 tablespoons white wine vinegar

1 clove garlic, minced
1 teaspoon chopped fresh dill

Steps:

  • Toss radishes with salt; let stand for about 10 minutes. Drain any liquid and transfer radishes to a large bowl. Add red onion and cucumber slices.

1 medium watermelon radish or 1 bunch red radishes
2 poblano chilies
3 tablespoons fresh lime juice, more to taste
1/2 cup minced fresh cilantro
1/4 teaspoon kosher salt
Freshly ground pepper to taste
Pinch cayenne pepper
1/4 teaspoon sugar
3 1/2 tablespoons vegetable oil

Steps:

  • Make slaw: Remove tough outer leaves of cabbage halves and core halves. Using a food processor, a mandoline or a knife, shred cabbage as finely as possible.
