QUICK SAUSAGE MEATBALLS WITH A TOMATO AND BASIL SAUCE, SPAGHETTI AND SWEET RAW PEAS
This is a fantastic recipe that completely celebrates everything I love about peas. Even though they only make an appearance right at the end, it's a star performance. I like to serve a pile of unshelled peas in the middle of the table so that everyone gets to shell some over their own plate. It's also an incredibly fast recipe - you can be sitting down to eat within a minute of the pasta being done. The key to getting it right, though, is to buy really good-quality sausages

Steps:
- Heat a large saucepan and add a few glugs of olive oil. Snip the sausages apart, then squeeze and pinch the meat out of the skins so that you get little meatball shapes - don't make them too big or they will take too long to cook. Try to get at least 3 balls out of each sausage. Don't worry about rolling them into perfect balls and making them look all fancy - rough and rustic is good! Put them into your pan. Keep frying and turning the meatballs until they're golden brown and cooked through.
- Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the package instructions until al dente.
- To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic and the chopped basil stalks and move them around the pan for a couple of minutes. Put some small basil leaves aside for later, and sprinkle the rest into the pan. Add the tomatoes and season carefully with salt and pepper, to taste. Bring to a simmer, break up your tomatoes a bit more with a spoon and add a swig of balsamic vinegar - it's lovely for adding sweetness to the sauce.
- Add the herbs to the pan of sausage meatballs, tossing everything in all the lovely flavors. Cook for around 30 seconds. When your spaghetti is cooked, drain it and divide the pasta and meatballs between 4 bowls. Spoon over the tomato sauce. Sprinkle over the reserved basil leaves and serve with a handful of fresh peas per person in the middle of the table, so that everyone can have a go at shelling their own, and a little Parmesan for grating or shaving over the top.

QUICK EASY GREAT SPAGHETTI SAUCE
I have a family recipe that my Dad and his Air Force buddies used to make but it takes all day to cook and lots of beer to be consumed!! This is a quick easy delicious alternative for busy Moms and Dads.

Steps:
- 1. Dice onion, green pepper, mushrooms, and celery into similar sized pieces. Place on a plate.
- 2. In a large pot, pour 2 tablespoons of olive oil over medium heat. Add italian seasonings, salt, pepper and garlic stirring for two to three minutes.
- 3. Add diced green pepper and celery and cook for two minutes. Then add onion and mushrooms and cook until tender. You may want to turn the temperature down a bit while you're working on the next step.
- 4. While the vegetables are cooking, brown the hamburger in a skillet. When done add to the large pot.
- 5. This next step can be done two ways. My preference is to remove the italian sausage from the casings and brown in the same skillet that I cooked the hamburger in. You can also brown the italian sausage in the casings and cut into bite size pieces when done. Either way you choose, once the sausage is cooked place it in the large pot with the hamburger, vegetables and seasonings and stir to incorporate all the flavors.
- 6. Add Prego spaghetti sauce. Use any flavor. I like to mix them up using traditional, meat and chunky vegetable. You can't go wrong! Simmer on low heat for 30 minutes.
- 7. Here's a couple of tips. 1. If you use fresh herbs be sure to use less since the flavor is much more robust. 2. If your spaghetti sauce is a little tart, add two teaspons of sugar. It will cut the acid in the tomato sauce. 3. When I use fresh herbs, this is what I typically put in the sauce: rosemary, basil, oregano, dill and thyme. For the rosemary and dill, run the branch between your fingers to remove the rosemary and add to pot. Basil should be diced along with the oregano and dill. 4. You can freeze the spaghetti sauce in plastic containers or freezer bags. Be sure to lay the bags flat in the freezer. They will defrost very quickly this way and take up less room. 5. This sauce can be use for spaghetti, lasagna, beefaroni, stromboli....all kinds of dishes!
Tips:
- Use fresh, ripe tomatoes: The quality of your tomatoes will greatly impact the flavor of your sauce. Use vine-ripened tomatoes that are in season and have a deep red color.
- Roast your tomatoes: Roasting tomatoes intensifies their flavor and sweetness. To roast tomatoes, simply toss them with olive oil, salt, and pepper, and roast them in a preheated oven at 425 degrees Fahrenheit for about 30 minutes, or until they are softened and caramelized.
- Use a variety of herbs and spices: Don't be afraid to experiment with different herbs and spices to create a unique flavor profile for your sauce. Some popular choices include basil, oregano, thyme, rosemary, garlic, and red pepper flakes.
- Simmer your sauce for at least 30 minutes: Simmering allows the flavors in your sauce to meld and develop. The longer you simmer it, the better it will taste. If you're short on time, there are quick-cooking options such as using tomato puree or canned tomatoes blended with tomato paste. However, if you can, simmer your sauce for as long as possible.
- Add a little bit of sugar: A small amount of sugar can help to balance out the acidity of the tomatoes and create a more well-rounded flavor. Just be careful not to add too much, or your sauce will become too sweet.
Conclusion:
With these tips in mind, you can easily make a delicious and flavorful spaghetti sauce at home. Just remember to use fresh, ripe tomatoes, roast them if possible, and simmer your sauce for at least 30 minutes. With a little bit of practice, you'll be able to make a spaghetti sauce that will impress your family and friends.
