1 cup confectioners' sugar
4 ounces cream cheese, softened

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Brush a 9-inch square baking dish with 2 tablespoons melted butter.
  • Whisk flour, 2 tablespoons white sugar, baking powder, and salt together in a large bowl. Work 3 tablespoons softened butter into flour mixture using your hands. Beat milk and egg together in another bowl; pour into flour-butter mixture and stir with a rubber spatula until a soft dough forms.
  • Turn dough out onto a floured work surface and roll dough into a 1/4-inch thick rectangle. Brush surface of dough with 2 tablespoons melted butter.
  • Whisk 1/2 cup white sugar, brown sugar, and cinnamon together in a small bowl. Sprinkle 1/2 of the cinnamon sugar mixture in the bottom of the prepared baking dish. Sprinkle remaining cinnamon sugar over butter-brushed dough. Roll dough around filling to form a log; cut log into 18 rolls and place rolls in the prepared baking dish.
  • Bake in the preheated oven until rolls are set, 20 to 25 minutes.

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.

Steps:

  • For the filling, in a small bowl combine softened butter, brown sugar and cinnamon to form a crumbly mixture.

1 tablespoon pine nuts
1 pinch red pepper flakes
2 cloves garlic, pressed
1/3 cup olive oil
1 tablespoon lemon juice
1/2 cup mayonnaise
1/4 cup sour cream
Pinch kosher salt
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon sugar
1 clove garlic, pressed

8 peeled and deveined cooked shrimp (16/20 count), tails removed, halved lengthwise
1 cup shredded romaine lettuce
Four 8-inch rice paper wrappers
8 large fresh basil leaves

Steps:

  • For the quick pesto dipping sauce: Add the basil, Parmesan, pine nuts, red pepper flakes and garlic to the base of a small food processor. With the processor running, drizzle in the oil and lemon juice and allow the mixture to become smooth. Scrape the sides, then add the mayonnaise, sour cream and salt and process until combined, about 1 minute.
  • For the simple lemon dressing: Add the olive oil, lemon juice, sugar, garlic, salt and pepper to a small mason jar. Secure the lid and shake to combine,
  • For the assembly: Add the shrimp to a small bowl and toss in 2 tablespoons of the lemon dressing. Set aside.
  • Add the shredded romaine to a bowl and toss with the remaining lemon dressing. Set aside.
  • One at a time, place the rice wrappers in warm water until they are soft but still hold together, about 30 seconds. Lay the wrapper flat on a plate and start by shingling 4 shrimp halves and 2 basil leaves in the center of the wrapper. Add one-quarter of the roasted peppers, onions and tomatoes. Drizzle with 2 teaspoons of the pesto dipping sauce. Finally, top with a one-quarter of the lettuce in a small line. Fold in the sides of the wrapper and roll into a tight roll. Cut in half on the diagonal. Repeat to make the other 3 rolls.
  • Dip the rolls into the pesto dipping sauce and dig in! Best if eaten within 1 hour of making.

1/4 cup nuts, chopped (pecans or walnuts are best)

Steps:

  • Preheat oven to 425 degrees, lightly spray or butter the bottom of a 8" or 9" cake round cake pan.
  • Rolls.
  • Put all the ingredients for the topping into the pan stir together and spread evenly over the pan, set aside.
  • Stir together dry ingredients, cut in the cold butter until the mixture looks like fine granules, add the milk stirring with a fork until the dough comes together into a soft dough (add a touch more milk if needed).
  • Turn the dough out onto a lightly floured surface and give 10 kneads (You can refrigerate the dough for 10 minutes at this point if desired, wrap in plastic if doing so). Roll dough into a rectangle, about 16x12 inches.
  • Filling.
  • Brush dough with soft butter leaving a 1" border along one of the long edges. Mix together the brown sugar, cinnamon, and nuts, sprinkle over the buttered dough. Starting with the long, buttered edge closet to you, roll up jelly roll fashion, when you reach the other edge gently pinch the dough together sealing in the filling. Cut the dough into 16 slices, place them cut side down on top of the brown sugar mix in the pan, spacing slightly apart.
  • Bake 25 minutes, or until nicely browned. Invert immediately ontoa serving plate and remove pan (scrape any left behind goo, onto the rolls, then go put the pan in the sink, fill it with hot water to soak), cool rolls slightly and serve.

Steps:

  • To Make the Sauce:.
  • Pound all the ingredients together in a mortar with a pestle until smooth. (Alternatively, combine the ingredients in a food processor and pulse to form a smooth paste.) Heat the sauce in a wok over medium heat, bring to a boil, then reduce the heat and simmer until thickened. Remove from the heat and cool.
  • To Make the Spring Rolls:.
  • Heat the oil in a wok over medium head. Add the jicama and oyster sauce and sauté for 30 seconds. Remove from the heat and set aside to cool.
  • Soften a spring roll wrapper in warm water and lay out on a work surface. Put a little of the lettuce, bean sprouts, pork rind, fried shallots, and jicama in the center of the wrapper. Add a little sauce and top with a slice of roasted pork and 2-3 shrimp slices. Fold the bottom of the wrapper up and over the filling. fold the left and right sides in to create a package. Roll the package up toward the top and brush a little water on the top edges of the wrapper to stick the package together. Repeat until you have used up all the fillings. Cut the rolls in half and serve with the remaining sauce.

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Mix cream cheese, spinach, mozzarella, parmesan, and garlic. Season with salt and pepper, if desired depending on how salty your cheese is.
  • 3. Spread cream cheese mixture evenly over lasagna noodles. Top with sliced tomatoes, if using. Roll. Line bottom of 9x9 baking dish with enough sauce to cover. Add rolls, seam side down. Top with remaining sauce.
  • 4. Bake at 375 degrees for 30 minutes.

FOR THE DOUGH:
2 c all purpose flour
2 Tbsp sugar
4 tsp baking powder
1 tsp salt
3 Tbsp butter, softened
3/4 c milk
FOR THE FILLING:
4 Tbsp butter, softened
1 c brown sugar
3 tsp ground cinnamon
FOR THE GLAZE:
1/2 c confectioners' sugar (powdered)
1/4 c milk

Steps:

  • 1. Filling: In a small bowl, combine the softened butter, brown sugar and cinnamon to form a crumbly mixture. Sprinkle half of the mixture over the bottom of a 9x9" pan.
  • 2. Dough: In a large bowl, mix together the flour, sugar, baking powder and salt. Cut in softened butter. Stir in milk to form a soft dough.
  • 3. Roll out the dough on a lightly floured surface into a rectangle about 1/4" thick.
  • 4. Spread the remaining filling on the rolled-out dough. Roll up the rectangle, and with a sharp knife slice into 18 small rolls (or 12 if you want them bigger).
  • 5. Place the rolls in the 9x9" pan and bake in a pre-heated 400-degree oven for 20-25 minutes.
  • 6. Glaze: combine powdered sugar and milk in a small bowl and stir until smooth.
  • 7. When the rolls are done, drizzle on the glaze and serve warm with hot coffee or a cold glass of milk.

3 3/4 cups unbleached all-purpose flour, packed in measuring cup (18 3/4 ou)
1/4 cup sugar
2 1/4 teaspoons instant yeast
2 cups water
1/2 cup unsalted butter
1 large egg, lightly beaten
1 teaspoon salt

Steps:

  • In large bowl, whisk together flour, sugar,yeast and salt.
  • On stove or in microwave, heat water and butter together until butter is melted and mixture is 120 - 130 degrees.
  • With dough whisk or large wooden spoon, stir into flour mixture along with beaten egg until blended. The dough will be very sticky.
  • Cover and let rise until doubled, about 35 to 45 minutes.
  • Stir dough down (just a few strokes). With a 1/4 c measure, scoop dough into well-greased muffin tins. (you can use cooking spray instead of greasing). Fill tins 2/3 full.
  • Let rise, uncovered, 20 to 30 minutes, or until dough has risen to the top of the cups.
  • During the last 15 minutes, heat oven to 400 degrees.
  • Bake 20 minutes, or until rolls are golden brown.
  • Let stand 5 minutes before removing from tins.

The idea to make these popped into my mind when I made **Jubes** Quick Gluten Free Scones #220200 for the first time. Instead of cutting out scones I rolled the flattened dough and thought that actually I could have filled it. So I made a second batch of dough and made up my own version of cinnamon roll filling. I really liked that they were not overly sweet as the dough is not sweetened. As usual, I used rice syrup, but will suggest honey which might be slightly sweeter. Instead of the pine nuts you can of course use any other nut you like. I thought about pecans and maple syrup for the filling - if anyone feels like trying that, please tell me how it turned out!

2 cups gluten-free bread mix
2/3 cup whipping cream
water
2 tablespoons butter, softened
2 tablespoons honey
1 teaspoon cinnamon
2 tablespoons pine nuts, chopped

Steps:

  • Preheat oven to 200 ° Celsius.
  • Mix gluten-free bread flour mix and cream lightly. You should just barely nead to get a soft dough. If it's too crumbly, add water by tablespoons until the consistency is so that you can just form a ball of dough to roll out.
  • Roll the dough out between two sheets of nonstick baking paper into a rectangle as thinly as possible. I managed about 1/2 inch thickness.
  • Cream together butter, honey and cinnamon.
  • Gently brush the mixture on the dough, maybe using a knife or your fingers. If the mass is too solid to brush, lightly melt it in a water bath so that it becomes softer but not liquid.
  • Sprinkle with chopped pine nuts.
  • Carefully roll the dough into a log.
  • Using a sharp knife dusted with some rice flour, cut it into 14 rolls.
  • If the filling is too runny, cover the log with cling-wrap and let it settle in the fridge for some minutes, then cut into rolls.
  • Place rolls on a baking tray layered with baking paper. As **Jubes** suggests, put them together close to assist rising.
  • Brush the top of the rolls with milk.
  • Bake for about 10 minutes or until they're done.
  • Enjoy!

9 tablespoons melted butter (1 stick & 1 tbsp.)

6 tablespoons melted butter
3/4 cup raisins
1 tablespoon cinnamon
1 2/3 cups sifted powdered sugar

Steps:

  • For dough: Combine sweet potato, 9 tablespoons melted butter, and 1/2 cup milk. Stir in the flour,1/4 cup sugar, baking powder, and salt. Mix until well blended.
  • When a soft dough forms, roll the dough onto a floured surface. Form the dough into a 12 x 15 inch rectangle.
  • In a small boewl, combine the 6 tablespoons of melted butter, raisins, and cinnamon. Sprinkle the filling mixture over the dough. Roll dough lengthwise, pinching the seams together.
  • Cut dough into 3/4 inch slices and place close together in greased baking pan.
  • Bake until golden brown at 425 degrees for 15-20 minutes.
  • While rolls are baking, make the glaze. In a small bowl, combine the powdered sugar, 2 tablspoons milk, and vanilla extract until smooth.
  • When the rolls are done, remove them from the oven. Immediately spoon the glaze over the rolls. Serve hot. (Makes 20 rolls.).

From the Penzey's Spices website. I was killing time at a bookstore recently and saw this recipe in a Penzey's cookbook. I want to try it because it doesn't have yeast in it.

3 cups flour
1/4 teaspoon salt
4 teaspoons baking powder
1/2 cup sugar
2 eggs
2/3 cup milk
1/2 teaspoon pure vanilla extract
1/2 cup butter or 1/2 cup shortening, melted
1/2 cup white sugar
1/4 cup melted butter
1 1/2 teaspoons cinnamon, the stronger the better
1/2 cup brown sugar
1/2 cup broken walnuts or 1/2 cup pecans
3 tablespoons melted butter
1 cup powdered sugar
2 tablespoons warm milk
1 tablespoon melted butter
1/4 teaspoon pure vanilla extract

Steps:

  • Sift flour with salt, baking powder and sugar into a large mixing bowl, and make a well in the center of the dry ingredients. In another bowl, beat eggs until well mixed, pour into the center of the dry ingredients, along with milk, pure vanilla extract, and butter, which should be melted and cooled slightly, so it is warm, not hot. Mix by hand with a wooden spoon, or on the lowest speed with a mixer.
  • Once the dough is holding together, turn out onto a floured board, knead for 1 minute. This dough is easy to work with-if it seems sticky, sprinkle a bit more flour onto it as you work. Turn the dough over once or twice as you are kneading, then roll the dough out into a rectangular shape about 1/4 inch thick. Shoot for about a 9" by 13" rectangle, just like a baking pan, but don't worry if it is a bit bigger or smaller.
  • Combine the filling ingredients, mixing well in a small bowl, then spread onto the dough using a flexible spatula, the back of a spoon or a pastry brush, smoothing out from the middle to 1/2 inch from the edge. Roll the dough up into a jellyroll from the long side, and, using a sharp knife, cut the dough as evenly as possible into 18 pieces.
  • Mix the topping together in a small bowl. Use spray oil to grease a muffin pan, then divide the topping between 18 muffin tins. After dividing up the topping, place one piece of dough, cut side down, in each muffin tin, on top of the walnut mix. Bake in a preheated 350° oven for 20-25 minutes, until golden brown.
  • Remove the cinnamon rolls right away to cool, if some of the topping stays in the tin, just pull it out with a spoon and replace it on top of the muffin while it's still hot. Prepare the icing by whisking all the ingredients together while the rolls cool for at least 10 minutes,. Cinnamon Rolls look great served upside down or rightside up. Pick which you prefer, drizzle with icing and serve.
