MOROCCAN CHICKPEA AND VEGETABLE STEW WITH COUSCOUS

Moroccan Chickpea and Vegetable Stew with Couscous image

This is delicious stew. Very flavorful from the spices, but not too spicy, just right. There is no meat in it, and you most likely won't miss it, as the chickpeas are very "meaty" themselves. But I don't see why you couldn't add some meat if you really wanted to. It also goes from prep to table in about 30 minutes, great for weeknight dinners. From Cooking Light.

Tips:

  • Use fresh, flavorful vegetables. The fresher the vegetables, the better the couscous will taste. Look for vegetables that are brightly colored and crisp.
  • Rinse the chickpeas well before using them. This will help to remove any dirt or debris.
  • Use a flavorful broth. The broth is what will give the couscous its flavor, so be sure to use a broth with robust flavor. You can use chicken broth, vegetable broth, or even beef broth.
  • Don't overcook the couscous. Couscous only takes a few minutes to cook, so be careful not to overcook it. Otherwise, it will become mushy.
  • Fluff the couscous with a fork before serving. This will help to separate the grains and make the couscous light and fluffy.

Conclusion:

Moroccan chickpea and vegetable couscous is a quick, easy, and delicious meal that is perfect for busy weeknights. It is packed with flavor and nutrients, and it can be easily adapted to your own dietary needs and preferences. So next time you are looking for a healthy and satisfying meal, give this Moroccan chickpea and vegetable couscous a try.
