1/4 cup diced onion
1 garlic clove, minced
1 tablespoon butter
1 tablespoon all-purpose flour
1-1/4 cups fat-free half-and-half
4 ounces fat-free cream cheese, cubed
3/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 package (16 ounces) frozen leaf spinach, thawed and squeezed dry
1/4 cup plus 1 tablespoon shredded Parmesan cheese, divided

Steps:

  • In a large nonstick skillet, saute onion and garlic in butter until tender. Stir in flour until blended. Gradually whisk in half-and-half until blended. Bring to a boil over medium-low heat; cook and stir for 2 minutes or until slightly thickened., Add the cream cheese, salt, nutmeg and pepper, stirring until cream cheese is melted. Stir in spinach and 1/4 cup Parmesan cheese; heat through. Sprinkle with remaining Parmesan cheese. Serve immediately.

1 pound fresh spinach
½ cup water
1 teaspoon salt
1 teaspoon butter or margarine
1 teaspoon all-purpose flour

Steps:

  • Wash spinach well and remove any hard stems. In a large pot, bring water to a boil and add spinach (it will cook down very rapidly). Remove spinach from the stovetop, let cool slightly then drain reserving the water.
  • Using an electric food processor, puree the spinach.
  • Make roux with the butter, flour and reserved water. Add the roux to the spinach, stir and serve.

I think the cheeses would be interchangeable with almost any, I used what I had on hand. Monterrey Jack would probably be a great substitute for the italian blend cheeses

10 ounces frozen spinach, chopped
2 ounces cream cheese
1/4 cup light sour cream
2 tablespoons feta, crumbles
1/2 cup shredded cheese (italian blend or other)

1 small onion
1 tablespoon garlic, minced
2 -3 dashes Tabasco sauce
salt & pepper

Steps:

  • Saute' chopped onion & minced garlic in butter until soft.
  • Add fresh spinach (cut in thick strips) and defrosted or microwaved frozen spinach until wilted.
  • Melt in the cream cheese, sour cream, and other cheeses. As your sauce develops and thickens, add your seasoning. If you are using feta cheese, throw it in at the very end.
  • Do not overcook-part of the charm of this dish is the fresh taste of the baby spinach-don't kill it!
