Time 55m

Yield Serves 4 to 6

Number Of Ingredients 16

1 tablespoon extra virgin olive oil
1 medium onion, chopped

1 stick celery, chopped (optional)
Salt to taste
2 large garlic cloves, minced
1 14-ounce can chopped tomatoes, with juice
6 cups water
1 tablespoon tomato paste
1 teaspoon oregano
1 medium Yukon gold potato (about 6 ounces), diced
A bouquet garni made with a bay leaf, a couple of sprigs each parsley and thyme, and a Parmesan rind (optional - but it does add flavor; use what you have for this)

Stir in the tomatoes and juice from the can, add another pinch of salt and cook, stirring often, for 5 to 10 minutes, until the tomatoes have cooked down slightly.

  • Add the kale and simmer another 10 minutes, until the kale and potatoes are tender and the soup is fragrant. Taste, adjust salt, and add pepper. Stir in the beans and heat through for 5 minutes. Serve, sprinkling some Parmesan over each bowl.

QUICK KIDNEY BEAN SOUP WITH SAVOY CABBAGE

Quick Kidney Bean Soup With Savoy Cabbage image

Entered for safe-keeping for ZWT. By Ana Patuleia Ortins from "Portuguese Homestyle Cooking". Per Ms. Ortins, "While you can use canned beans in a pinch, keep a watch on the sodium level. If time permits, use the less expensive and healthier method of presoaking dried legumes overnight, rinsing them then cooking them in unsalted water or broth and set aside until needed. You can do this a day or two ahead.. To have presoaked beans cook in your soup, add salt only towards the end when the beans are tender. Salting too early will result in tough beans."

Provided by KateL

Categories     One Dish Meal

Time 1h37m

Yield 6 serving(s)

Number Of Ingredients 11

6 cups water
2 cups savoy cabbage, finely shredded
2 cups cooked kidney beans (see recipe description, include liquid from canned beans) or 28 ounces canned low-sodium kidney beans (see recipe description, include liquid from canned beans)
3 tablespoons olive oil
1 garlic clove, finely chopped
1/4 cup small shell pasta

1/4 lb fresh green beans, trimmed ends and cut into 1/2-inch pieces
1 carrot, peeled and cut into 1/2-inch cubes
1/4 teaspoon black pepper (to taste)

Steps:

  • In a 4-quart pot, combine the water with the cabbage, beans, and olive oil. Cover and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low and with an occasional stir, simmer the soup for 40 minutes until the beans are easily mashed with a fork.
  • Using the back of a long-handled fork or spoon, mash some of the beans against the inside of the pot. (You can also remove about ½ cup to a dish and mash them then scoop them back into the pot.).
  • Return the soup to a boil and add the pasta, rice and salt. Reduce the heat and continue to simmer, covered for 15 minutes then toss in the carrots, green beans and pepper.
  • Simmer 10 more minutes until the vegetables are tender to your taste.

QUICK AND SPICY WHITE BEAN SOUP CAJUN STYLE

Quick and Spicy White Bean Soup Cajun Style image

I love Cajun country and their food. This is a quick and easy weeknight meal. Serve with fresh baked cornbread for a down home treat.

Provided by PaulaG

Categories     Cajun

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 17

2 slices bacon, diced
1 medium carrot, chopped
1 celery rib, chopped
1 medium green pepper, chopped
3 garlic cloves, minced
1/4 lb tasso ham, diced (If this is not available diced ham pieces can be used.)
1/2 lb smoked sausage, cut crosswise into 1/4-inch slices
2 (14 1/2 ounce) cans navy beans
1 cup chicken broth
4 tablespoons dried onion, minced
1 medium jalapeno, seeded and minced
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon cajun seasoning
Tabasco sauce, to taste
salt and pepper, to taste
1 cup brown rice
green onion, sliced

Steps:

  • Heat a heavy dutch oven over medium high heat. When hot add in the diced bacon and render out the fat. Add in the carrot, celery, green pepper and garlic. Cook, stirring frequently until vegetables are wilted and crisp tender. Add the ham and smoked sausage. Cook until the meat begins to brown.
  • Drain and rinse the beans. Stir in the beans, chicken stock, dried onion, jalapeno, tomatoes and Cajun seasoning. Stir to combine. Add a few shakes of Tabasco sauce to taste. If desired, season with salt and pepper. Lower heat and allow to simmer for 30 minutes.
  • In another pot cook the brown rice as per package instructions. Place a serving of rice in a bowl, spoon soup over and garnish with sliced green onions.

Tips:

  • Soak the beans overnight: This will help to reduce cooking time and make the beans more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them stand for 1 hour.
  • Use a variety of beans: This will give your soup a more complex flavor and texture. Some good options include black beans, kidney beans, pinto beans, and navy beans.
  • Add vegetables: Vegetables will add flavor, nutrition, and color to your soup. Some good options include carrots, celery, onions, and tomatoes.
  • Use a flavorful broth: The broth is the base of your soup, so it's important to use a flavorful one. You can use chicken broth, vegetable broth, or beef broth. If you're using a canned broth, be sure to choose one that is low in sodium.
  • Season to taste: Once your soup is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or other spices.
  • Serve with your favorite toppings: Some good options include sour cream, shredded cheese, chopped cilantro, or diced avocado.

Conclusion:
