Huevos rancheros is a classic Mexican breakfast dish that is both delicious and easy to make. It consists of fried eggs served on a tortilla, with a spicy tomato sauce, and often topped with cheese and other ingredients such as avocado, cilantro, and refried beans. The dish is believed to have originated in the state of Jalisco, Mexico, and has since become a popular breakfast and brunch item throughout the country and beyond.
There are many different recipes for huevos rancheros, but they all share a few common elements. The eggs are typically fried in oil until they are cooked to your liking. The tomato sauce is made with fresh or canned tomatoes, onions, garlic, and chili peppers. The sauce is then simmered until it has thickened and is flavorful. The tortillas are warmed and used to cradle the fried eggs and sauce.
Huevos rancheros can be customized to your liking. For example, you can adjust the spiciness of the tomato sauce by adding more or less chili peppers. You can also add other ingredients to the sauce, such as bell peppers, corn, or black beans. And, of course, you can top the dish with your favorite toppings, such as cheese, avocado, cilantro, or salsa.
Huevos rancheros is a versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover tortillas and tomato sauce. If you are looking for a delicious and easy Mexican dish to try, huevos rancheros is a great option.

QUICK AND EASY HUEVOS RANCHEROS
Being Canadian, the only time we were able to enjoy this dish was when we traveled to Cali. When searching for a recipe (including this site) I unfortunately could not find the perfect solution. There were so many different variations with either too many ingredients or missing things we love most. I'm a busy Mom and want EASY so I decided to wing it and came up with my own version. Top with sour cream if desired.
